The historical profile of the castle has guided our choice to recover vineyards abandoned, even for many years, but classified for the excellence of the quality of the wines products. These are very sloping lands characterized by a marked environment biodiversity. The fifteenth-century cellar of the castle is semi-underground and enjoys stability of temperature and humidity. We are natural and biodynamic winemakers, we have chosen to working with native vines: Dolcetto, then Barbera and Timorasso. Our intent small winery is to contribute to the affirmation of a landscape model, oenological and cultural with a strong identity connotation. Currently the vineyard area is about 4 ht and we are in the process of recovering another 3 ht in the woods in the locality of Trionzo (a place renowned for the quality of its wines). As the crow flies we are about 25 km away from the sea which affects the soil: limestone marl and tuff and the air thanks to Marino, an afternoon breeze that brings us the essences of the maquis Mediterranean. Being vineyards with a slope of more than 30% we have many manual processes and we do not use the tractor very little, favoring a small and not very compact vehicle. Light topping and harvest by hand in small boxes immediately transferred in the cellar for winemaking. Spontaneous fermentations, no filtration and no technological intervention.

Il profilo storico del castello ha indirizzato la nostra scelta di recuperare vigne
abbandonate, anche da molti anni, ma classificate per l’eccellenza della qualità dei vini
prodotti. Si tratta di terreni molto pendenti caratterizzati da un ambiente a spiccata
biodiversità. La cantina quattrocentesca del castello è semi-ipogea e gode di stabilità
di temperatura e umidità. Siamo vignaioli naturali e biodinamici, abbiamo scelto di
lavorare con vitigni autoctoni: Dolcetto, poi Barbera e Timorasso.L’intento della nostra
piccola realtà vitivinicola è di contribuire all’affermazione di un modello paesaggistico,
enologico e culturale a forte connotazione identitaria.
Attualmente la superficie vitata è di ca 4 ht e siamo in procinto di recuperare altri 3 ht
di bosco in località Trionzo (luogo rinomato per la qualità dei suoi vini). In linea d’aria
distiamo dal mare ca 25 km che influenza il suolo: marne calcaree e tufo e l’aria
grazie al Marino, venticello pomeridiano che ci porta le essenze della macchia
mediterranea.
Essendo vigne con pendenza superiore al 30% abbiamo molte lavorazioni manuali e
utilizziamo poco il trattore privilegiando un mezzo piccolo e poco compattante.
Leggera cimatura e vendemmia a mano in piccole cassette immediatamente trasferite
in cantina per la vinificazione.
Fermentazioni spontanee, nessuna filtrazione e nessun intervento tecnologico.
