Monte Caro is a 7 hectare farm: 5 of vineyards and 2 of olive trees. We are located on the south-east side of Monte Caro, located in the Mezzane valley. The company is surrounded by woods; The cellar and our house are located in the center of the vineyards, which are at an altitude ranging from 150 to 300 meters above sea level.
The company was founded by our father in 1986 and for this reason we have vineyards of different ages. Since 2007 we have started experimenting with vinification and since 2014 we have started to bottle our wine.
In order to better control the microclimate in the vineyard, all operations are performed manually. Organic farming is integrated with microbiology (mushrooms, algae) and herbal decoctions to regenerate and enhance the vitality of the soil, which is increasingly rich in spontaneous herbs. Around the vineyards we are increasing the presence of fruit trees and some hives.
We harvest manually and our wines ferment spontaneously.
We do not use any chemical additives and the sulphides are usually between 20 and 50 mg / l depending on the type of wine. The wines are all unfiltered.
