In Foglianise, in the Sannio area, on the slopes of Taburno, we produce natural wines with artisanal methods. Our vines aged between 15 and 50 years come from 5 small unique plots located between 300 and 400 meters high for a total of about 3 hectares. The vines are grown with respect for the land, without any use of synthetic products, and treated only with copper and sulfur when necessary to prevent disease or mould. We vinify the grapes of each parcel separately Our hand-picked grapes ferment in open vats, in prolonged contact with the skins without temperature control. As per the local peasant tradition, these are mostly mixed varieties that we vinify together, the only exception being Aglianico Rosato MU', a single variety vinified in white. The fermentations are spontaneous, activated by indigenous yeasts naturally present on the grapes without the use of selected yeasts, adjuvants or oenological additives. We do not carry out clarification, filtering or stabilization. Sulfur dioxide is never added at any stage of production. After a couple of rackings and months of élevage on the fine lees, in glass, fiberglass or steel, we bottle our wines by hand.

A Foglianise, nel Sannio, alle pendici del Taburno, produciamo vini naturali con metodi artigianali.
Le nostre viti di età compresa tra i 15 e i 50 anni provengono da 5 piccoli appezzamenti unici situati tra i 300 ed i 400 metri di altezza per un totale di circa 3 ettari.
Le viti sono coltivate nel rispetto della terra, senza alcun uso di prodotti di sintesi, e trattate solo con rame e zolfo quando necessario per prevenire malattie o muffe.
Vinifichiamo separatamente le uve di ogni particella
Le nostre uve raccolte a mano fermentano in tini aperti, a contatto prolungato con le bucce senza controllo della temperatura.
Come da tradizione contadina locale si tratta perlopiù di varietà miste che vinifichiamo congiuntamente, l'unica eccezione è l'Aglianico Rosato MU', monovitigno vinificato in bianco.
Le fermentazioni sono spontanee, attivate dai lieviti indigeni naturalmente presenti sull'uva senza uso di lieviti selezionati, coadiuvanti o additivi enologici.
Non effettuiamo chiarifiche, filtraggi o stabilizzazioni.
L'anidride solforosa non viene mai aggiunta, in nessuna fase di produzione. Dopo un paio di travasi e mesi di élevage sulle fecce fini, in vetro, vetroresina o acciaio, imbottigliamo a mano i nostri vini.
