Oenologue de formation, François Rousset Martin se garde pourtant bien de "cuisiner" ses vins. En retrait et à l'écoute, il se considère davantage comme un passeur, interprète d'un terroir pluriel. Bien souvent, sa curiosité le conduit à expérimenter, comme démarrer une oxydation sous voile pour finir l'élevage en ouillant la barrique.
