MANIFEST:
* GROW vines in organic farming
* HIGHLIGHTING the grape varieties most linked to their terroir
* PROMOTE mass selections of the vines
* MAKE SOILS BREATHE and "enrich" them
* PRACTICE biodynamics
* VINIFY exclusively with indigenous yeasts
* DO NOT USE corrective products
* CHOOSE neutral and porous containers for aging wines
* MINIMIZE the doses of sulfur (objective <40 mg)
ORIGIN:
Francois, restaurateur and wine wholesaler in Paris, has been used since 2010 to help Florent, winemaker and manager of vineyards in different regions, with the harvest and vinification.
In 2015, they set up this collective with the same desire to decompartmentalize the world of wine and develop vintages with great human richness and the maximum amount of sharing.
Because the wines that appeal to them are those made on the grain, airy, elegant, with a minimum of security but a lot of “coolness”, they choose to name the collective “LES ÉQUILIBRISTES”.
