Sauvignon 2008

This wine make enormous impact. When smelling it keeps boggling the mind. Such expressive aromatic complexity and exciting depth. As a 2008 it is really mature. Difficult to capture, so outstanding and impressive. It is a real character to kneel for and look up to. It demands respect, which is well deserved. It is really interesting and unique to experience what macerated Sauvignon can become with the right treatment and proper patience, giving it a complete different character than what most people would picture when drinking an average Sauvignon Blanc. Intensely ripened tones of: Dried prunes, figs, raisins, apple, orange. Citrus zest. The association with Sherry comes to mind. But also caramel and "apple syrup". Vanilla, nuts, browned butter, bread crumbs. Also some herbs like dried Thyme. Slightly in the end maybe even some cacao. It has gentle tannins and good acidity which keeps it standing firm. Tech facts: "Maceration on the skins for 10 days and fermentation with indigenous yeasts. Without filtration.
