At Beck-Hartweg, viticulture has been a family story since 1525. We keep a vineyard area on a human scale (8 hectares in production), which allows us to do most of the family work. It is extremely important for us to carry out the work manually and personally. It is by being in daily contact with our vines, our soil, our terroirs that we change our way of working by having a precise knowledge of these elements. Florian Beck Hartweg, born in 1987, has worked in the vineyard full time since 2009. He takes care of the work of the vineyard with great passion for soil life and biodiversity. He loves to share his passion by explaining his work to visitors. It is he who manages the administrative part. He devotes a good part of his time to the collective life of the Alsatian vineyard (Vice President of the Syndicat des Vignerons Indépendants d'Alsace, Vice President of the UGV (University of Great Wines), responsible for the management of Frankstein Grand Cru among many other commitments). Mathilde (his wife), Yvette and Michel (his parents), as well as Nicolas (employee in the domain) work together on a daily basis in the vineyard of the domain. For us, the basis necessary for the production of great terroir wines is living soil. The first condition necessary for the life of the soil is the total absence of chemicals. It is for this reason that we work in organic viticulture certified by Ecocert. It is therefore the flora and fauna that will do most of the soil structuring work. We use the tractor very little to avoid disturbing these balances by compacting the soil. Manual picking is carried out on young plants to avoid plowing, which disrupts life in the soil. Trellising, harvesting and other work in the vineyard are done exclusively by hand. For us, it is above all the work done upstream in the vineyard that must give quality and personality to our wines. Our goal is to intervene as little as possible in the cellar, which, paradoxically, is much more complicated and technical than more "interventionist" vinification. After a work adapted to the vine (see Vineyard), we obtain perfectly ripe, balanced, and healthy grapes in both senses of the word: without rotting and without chemicals. All this allows us to consider wine making in a more relaxed way: no need to correct or "master" the material, we will simply play the role of guide, let the wine live while keeping an impeccable hygiene and monitoring of the wines to avoid any deviation. Fermentation starts with the action of yeasts naturally present on our grapes. The addition of sulfites is only rarely necessary, but if necessary a very small amount can be added during bottling.

Chez Beck-Hartweg, la viticulture est une histoire de famille depuis 1525. Nous conservons une surface de vignoble à taille humaine (8 hectares en production), ce qui nous permet de faire la majorité du travail en famille. C’est pour nous extrêmement important de réaliser les travaux manuellement et personnellement. C’est en étant quotidiennement au contact de nos vignes, de notre sol, de nos terroirs que nous faisons évoluer notre manière de travailler en ayant une connaissance précise de ces éléments.

Florian Beck Hartweg, né en 1987, travaille au vignoble à temps plein depuis 2009. Il s’occupe du travail de la vigne avec comme grande passion la vie des sols et la biodiversité. Il adore partager sa passion en expliquant son travail aux visiteurs. C’est lui qui gère la partie administrative. Il consacre une bonne partie de son temps à la vie collective du vignoble alsacien (Vice Président du Syndicat des Vignerons Indépendants d’Alsace, Vice Président de l’UGV (Université des Grands Vins), responsable de la gestion du Grand Cru Frankstein entre bien d’autres engagements). Mathilde (sa femme), Yvette et Michel (ses parents), ainsi que Nicolas (employé au domaine) travaillent de concert au quotidien dans le vignoble du domaine.
Pour nous, la base nécessaire à la production de grands vins de terroirs est un sol vivant. La première condition nécessaire à la vie des sols est l’absence totale de produits chimiques. C’est pour cette raison que nous travaillons en viticulture biologique certifiée par Ecocert. 
C’est donc la faune et la flore qui vont faire l’essentiel du travail de structuration des sols. Nous n’utilisons que très peu le tracteur pour éviter de perturber ces équilibres en tassant les sols. Un piochage manuel est réalisé sur les jeunes plants pour éviter les labours qui bouleversent la vie dans le sol. Le palissage, les vendanges et les autres travaux du vignoble se font exclusivement à la main.

Pour nous, c’est avant tout le travail fait en amont à la vigne qui doit donner qualité et personnalité à nos vins. Notre but est d’intervenir le moins possible en cave, ce qui, paradoxalement, est bien plus compliqué et technique qu’une vinification plus « interventionniste ». Après un travail adapté à la vigne (voir Vignoble), nous obtenons des raisins parfaitement mûrs, équilibrés, et sains dans les deux sens du terme : sans pourriture et sans produits chimiques.
Tout ceci nous permet d’envisager la vinification de manière plus détendue : nul besoin de corriger ou « maitriser » la matière, nous allons simplement jouer le rôle d’accompagnateur, laisser le vin vivre tout en gardant une hygiène et un suivi irréprochable des vins pour éviter toute déviation.

Les fermentations démarrent par l’action des levures naturellement présentes sur nos raisins. L'ajout de sulfites n'est que rarement nécessaire, mais si besoin un très faible quantité peut être ajoutée lors de la mise en bouteille.
