We are in the hamlet of Pauzes, in Beaumont in southern Ardèche and the wines have a beautiful view. Since our meeting, we have had in mind to make wine. After an oenologist diploma in Dijon and a few vinifications with inspiring winegrowers, we made a corner at home to put the press, vats and barrels and 2021 is our first vintage. Little by little, we are recovering vines and clearing old terraces on the schists of the hillsides of the Drobie valley to (re)plant them with vines, in particular with resistant grape varieties in order to arrive at "natural wines" of the vine to the cellar. In the meantime, we vinify in partnership with winegrowers with whom we share cultural visions and whom we warmly thank for their precious grapes. In the cellar, we accompany the grapes with indigenous yeasts, without input or filtration and with slow pressing in a manual ratchet press. Aging varies according to the cuvées, between vats and barrels of several wines.

Nous sommes au hameau des Pauzes, à Beaumont en sud Ardèche et les vins ont une belle vue.

Depuis notre rencontre, nous avons en tête de faire du vin. Après un diplôme d’œnologue à Dijon et quelques vinifications auprès de vignerons inspirants, nous avons fait un coin chez nous pour mettre pressoir, cuves et tonneaux et 2021 est notre premier millésime.

Petit à petit, nous récupérons des vignes et défrichons d’anciennes terrasses sur les schistes des coteaux de la vallée de la Drobie pour les (re)planter en vigne, notamment avec des cépages résistants afin d’arriver à des « vins naturels » de la vigne à la cave.

En attendant, nous vinifions en partenariat avec des viticulteurs avec qui nous partageons les visions culturales et que nous remercions chaleureusement pour leurs précieux raisins. 
A la cave, nous accompagnons les raisins avec les levures indigènes, sans intrant ni filtration et avec un pressurage lent au pressoir manuel à cliquet. L’élevage est variable selon les cuvées, entre cuves et fûts de plusieurs vins.
