The company was founded in 2018 with the aim of producing sustainable grapes and wine with a strong link with the territory. Where possible we try to recover old vineyards and ancient forms of farming, which allow a balanced development of the plant despite the difficulties of mechanization. The fruit obtained is then taken to the cellar, where it is transformed and becomes wine without any use of other ingredients or preservatives. The name KOI takes inspiration from Japanese culture, where carp is a symbol of perseverance and non-conformism. The winery is located in Valsamoggia (BO), for now all the plots are for rent, the total extension is about 7ha of vineyards and 5ha of arable land, all certified organic. Organic certification only in the countryside. In the cellar the grapes and then the wine do not undergo any treatment (apart from crushing or pressing), the wines ferment with indigenous yeasts at an uncontrolled temperature. The wine has no additives or clarifiers, there is no added sulfur in any wine.

L’azienda nasce nel 2018 con l’intento di produrre uva e vino sostenibile con un forte legame con il territorio. Dove possibile si cerca di recuperare vecchi vigneti e antiche forme di allevamento, le quali permettono uno sviluppo equilibrato della pianta nonostante le difficoltà di meccanizzazione. Il frutto ottenuto viene poi portato in cantina, dove si trasforma e diventa vino senza alcun utilizzo di altri ingredienti né conservanti.Il nome KOI prende ispirazione dalla cultura giapponese, dove la carpa è simbolo di perseveranza e anticonformismo.

La cantina si trova in Valsamoggia (BO), per ora tutti gli appezzamenti sono in affitto, l'estensione totale è di circa 7ha di vigneto e 5ha si seminativo, tutto certificato biologico.
Certificazione biologica solo in campagna. 
In cantina l'uva e poi il vino non subiscono alcun trattamento (a parte la pigiatura o la pressatura), i vini fermentano con lieviti indigeni a temperatura non controllata. Il vino non ha additivi nè chiarificanti, non c'è solforosa aggiunta in nessun vino.
