Located at the foot of the Luberon, in the town of Vitrolles-en-Luberon, the farm covers 23 hectares, including 9.5 hectares of vines. La Cabrery is one of the five collective places in France of Longo Maï, an active movement in numerous political and social initiatives. We currently live with 10 people, we are between 25 and 50 years old, come from a wide variety of backgrounds. Our table is often noisy and full: many friends come by to give us a hand, for the harvest, pruning, or simply to say hello. Apart from the wine-growing activity, we grow old varieties of wheat which we turn into sourdough bread. All agricultural products are organic and we attach great importance to soil life and biodiversity. We also produce fodder for our five Provencal goats, we have a large market garden, chickens, some fruit trees, olive trees, two cats, etc. Our youngest vines are 18 years old, the oldest are 35 years old, they have been cultivated organically for more than 15 years. All the vines are grassed with many varieties of legumes and grasses in order to best preserve biodiversity. Our yields are low, around 30 to 35 hectoliters per hectare, and we pay a lot of attention to pruning, de-sucking and disbudding. The harvest is manual, we collect the healthiest grapes possible, seeking the right balance of maturity. Among the three red grape varieties, there are Grenache, Syrah and Merlot. And for the whites, Sauvignon, Grenache Blanc and Viognier, as well as Clairette and Ugni. Our vinifications and aging are done either in vats or barrels according to our choices. Fermentations are spontaneous, and start thanks to the indigenous yeasts naturally present in the vine and on the grapes; we don't add yeasts or enzymes or anything. Unless there are major risks for a particular wine, we avoid adding sulphite during fermentation and vinification. The wines are neither fined nor filtered. For us, it is the quality of the grape that will decide the quality of the wine, we do not try to modify the natural process, we only accompany it as best as possible.
