A family adventure Our adventure began in 2015. It originated from our parents' desire to create a unifying project for their three sons. This family project took place in this unique place, overlooking this green valley where the Vienne joins the Loire. Over the course of the many days of family work to restore the estate to its former glory, its essential aspects appeared to us. This domain will not be wine-growing, but agricultural. Here, hedges, orchards, vines, meadows and cultivated land alternate harmoniously. Thus, like the ancestral agricultural estates, the different productions are distributed harmoniously according to the topography of the places. We pay particular attention to maintaining this balance, both by planting fruit trees and by letting our herd of Solognot sheep graze on the entire estate. Finally, if our main production remains viticulture, we are leaving the ambition to produce "great wines" to others. We prefer to try to produce fair wines, without artifice, which would have the simple vocation of transcribing this place, the climatology of the vintage and the sum of the actions taken throughout the year. The choice of organic farming Among the fifteen hectares of land on the estate, just over three are devoted to vines to date. The vines are entirely planted with Chenin Blanc, but a plantation of Pineau d'Aunis (or Chenin Noir) should take place in the years to come. The hillside on which the estate is located is mainly made up of clay soils, with flint in places, on a more or less flush limestone subsoil. Logically, the estate is fully certified in organic farming by Ecocert. We do most of the wine work by hand. Thus, over the seasons, we prune, disbud, dig, trellis, shear, and finally harvest with the sole objective of obtaining the healthiest grapes possible. We are keen not to resort to over-mechanization of our production, and prefer to think that the typicity of our wines comes more from our labor rather than from the use of shiny tools which would be the expression of any "progress". " Wines produced naturally The wines that we produce come only from the vines that we cultivate and are not oenological products. We want them alive and naturally developed. The harvest is done manually at full maturity, by successive sorting in 20 kg boxes. The grapes are quickly transported to our cellars located literally under our vines. The grapes are then either macerated (with or without stems depending on the vintages and the desired wine profiles) or directly pressed using our old horizontal press. Fermentations take place naturally in wood in our cool cellars and last several months. The wines are bottled after several months of aging. Our juices do not undergo any addition or modification of their own qualities. Only a slight sulphiting can occur during bottling depending on the vintages produced.
