Delphine is a creator at heart. She is curious, observant, and a little reserved at first. She doesn't force anything; she waits for the right moment. With delicacy and a passion that unfolds almost unexpectedly, she channels her energy into defending this deeply personal project that seems to have always been within her: the preservation of life. Becoming a winemaker was n't predetermined; encounters and her journey as an ecologist led her there, gently but surely. Wine, champagne! A wonderful banner for raising awareness and sharing, with joy and conviviality, the most pressing issues of this world.
Laurent could have been just another heir, taking over the reins of a traditional family estate. But that was without taking into account the young man's strong character, his appetite for a nuanced understanding of things, and a sensitivity that might almost seem paradoxical given his background as an agricultural engineer… who ultimately refused to be pigeonholed . His first job? He landed at Roederer, where he helped implement biodynamic practices!
When the duo decided – together – to become winemakers, they did what would become their trademark: choose the path that resonated most deeply with them… though not necessarily the easiest. To develop a project aligned with their deepest convictions, they decided in 2019 to create a new brand. To clearly affirm that the change was real. And to translate their dream as accurately as possible. This choice entailed several years of transition and knowledge transfer alongside Bernard, Laurent's uncle: complete conversion of the vineyard to organic and biodynamic farming, gradual evolution of practices, search for new partners, and the team's commitment to this demanding shift…
And, running through all these decisions and each of these steps, is the desire to convey what touches them here: the unique energy of a place, that of the village of Champignol-Lez- Mondeville, which, for centuries, seems to shelter those who come to live there. What some call the genius loci, the spirit of the place.
In the autumn of 2025, the first "Domaine de Mondeville" champagnes were produced. In the heart of this little-known area of the Côte des Bar – within this village which encompasses all their plots and constitutes the highest point of the entire Champagne wine region! – Delphine and Laurent are writing a new chapter today.
