After fifteen years of good and loyal service to the bistro "Les Zinzins du Vin", we wanted to take a step, return to the countryside and get closer to the source. Curiosity has always focused on those who deviate from the paths all drawn, the originals arranged under no chapel: Jean-Michel Labouygues was one of these unclassifiable artists. He leaves us in 2006. Meetings with Judith Labouygues, who had succeeded his father Jean-Michel for a while, brought us to a cellar and abandoned vineyards for several years, it was the moment or never to try to get them back on their feet. We are looking for other parcels to acquire the necessary surface, a little about ten hectares among the last vines of the area, some of which is still being cleared: the vines are old, to see very old, they become rare in this sector, where wild boar hunting and subsidized grubbing-up campaigns ended up vitiating wine. The adventure really begins in 2013 with our first grape harvest in Padern.  The care of the grounds and the care of the vines answer the principles of the organic farming, our request for certification at Ecocert is in progress since 2017. The winter grazing by ewes makes it possible to resorb a part of the grass while bringing a natural fertilization ... A lot of manual work in old vineyards difficult to machine except the tiller or the small crawler tractor. The pickaxe remains the best tool to eliminate perennials ... No deep plowing but superficial scratching at the end of winter, then mowing the grass in summer. Protect yourself from modern oenology, best convey the flesh of the fruit in the juice, vinify without artifice: there is only grape in our wines, and the fermentations are slowly under the action of indigenous yeasts of the soil and the cellar.
