The Villarzens estate is located in Bram between Carcassonne and Castelnaudary. We have 4 hectares of vines (1 hour of Merlot, 0.8 hours of Chardonnay, 0.8 hours of young plants of Syrah and Grenache and the rest Chenin, Cabernet Franc, Cinsault, Grenache Gris and Grenache blanc) We work in such a way as to intervene as little as possible both on the vine and during vinification, in order to obtain a natural wine as close as possible to our terroir. We have been Ecocert and Demeter certified since 2022. We treat with sulfur and copper to prevent against downy mildew and oidium, in very small quantities. Following the principles of biodynamics, we also apply its preparations (horn dung, silica, plant decoctions, etc.) to bring life back to our soils by limiting the intake of sulfur and copper as much as possible. Since 2021, a small flock of Ouessant sheep have been grazing in the vineyards. We carry out manual harvests, in boxes, and the entire winemaking process is done at the estate. The wines are worked without oenological inputs, without adding sulfur or filtration. Once the grapes have been harvested manually and vatted, the yeasts naturally present on the grapes do their work. The entire manufacturing process is done at the Domaine: manual harvesting, vinification, bottling, labeling and marketing. The wine is aged either in stainless steel or fiberglass vats and in oak barrels, having already housed several wines!
