My domain is located in Aude in the town of Cascastel des Corbières. I have 3 hectares of vines made up of small plots of carignan, syrah, and grenache on calco schist soils. All the work in the vines is done manually, the treatments but also well on the harvests with the comprises. My soils are naturally grassy and I do no plowing. In the cellar I vinify the majority of the destemmed grapes with macerations from 15 days to 3 weeks. I make 3 cuvées of red wine and some micro cuvées according to the years (late harvest, rosé ...) all of my cuvées are without any intran or sulphites and without filtration. Regarding the volumes of free and total sulfur refer to the analyzes but I do not use any sulphites.
