We are building a multi-generational family traditions, Pálfa in Tolna County, Hungary operates a naturalistic winery. We focus mainly on grape varieties from the Carpathian Basin, without the use of chemicals and with minimal intervention.
As a micro-estate, we have a total of 1.5 hectares of productive vineyards. In addition, another 4 hectares are waiting for settlement.
We are motivated mainly by the conscious building of physical and mental health. Therefore we decided in 2012, when we took over the estate: we will farm without chemicals (herbicides, insecticides, absorbable fungicides and other carriers). This means that, for example, orange oil, teas and preparations are used instead of sprays, pesticides and fertilizers. We rely mostly on the handwork of our small team, which we find extremely valuable, so we can manage the majority of the hard work by hands like pruning, selecting shoots and later the bunches, greenwork, harvesting etc.
And in the cellar, we strive for minimal intervention so that the juice can preserve its true flavors: no fining, no filtering, no selected yeast, no other additions at all and the majority of our wines are being made without the addition of sulfur.
