As part of our philosophy of maximum respect for the environment, we treat crops in the most ecological way possible, with natural products such as: sulfur, bentonite, diatomaceous earth, cinnamon, etc., and without the use of herbicides or other chemical products.
Regarding crops and land: given the topography and origin of our islands, the plots of land are small terraces open to the sea and impossible to mechanize. Located in the Valley of La Orotava, on the north side of the island, at altitudes between 400 and 800 meters above sea level.
The tropical climate influenced by the Trade Winds from the North Atlantic brings freshness and humidity to the open slopes to the north of the island, creating a great difference between these and those exposed to the south.
The vineyards, generally over a hundred years old and with a density of around 1,000 vines/ha, are planted on clayey-stony soils of volcanic origin.
The “Cordón Trenzado de La Orotava” training system has its origins in the need of our ancestors to use the land for other subsistence crops (cereals, potatoes, vegetables, etc.), parallel to that of the vine.
All crop work must be done manually.
During the manual and selective harvest, we cut the bunches that have reached the appropriate parameters to produce the type of wine intended.
Continuing with our philosophy, “greater care in the field and less intervention in the winery”, we try to have minimal influence during the winemaking process: that is why we carefully select which bunches are cut so that
Then in the winery we have an optimal fermentation without the contribution of cultured or foreign yeasts and with minimal contribution of sulfites.
In our latest vintages we have wines without added sulfites.
We are in the process of being granted the Organic and Vegan Farm certificate, since our analyses carried out by the ICCA confirm that our farm has zero waste.
