Colombaia is a 4 hectares vineyard south west exposed that round the house and the cellar. The soil is clay/calcar full of fossils shells.! Dante and Helena work the vineyard as a big garden, the byodinamic method allowed them to work in active perception, following the rhythm of nature. The activity in the cave is held in full respect of the fruit keeping intervention as little as possible, acting softly and sensitively. The fermentation is spontaneous with natural grape?s yeasts, working strictly in respect of the vintage. The extraction process is slow and careful, keeping the vital cycles of fermentation, without clarifying, filtering or stabilizing. Some vintages can have a tiny dose at the bottling SO2 added but the majority of the cuvees is with no so2 added.
Colombaia is not just a vineyard but an entire ecosystem of grapes, animals, vegetables and fruit all living in symbiosis with, and feeding into, each other. Colombaia means ‘dovecot’ and this is a distinguishing feature of the 16th century farmhouse whose estate sits 220 metres up on the Colle Val d’Elsa, on clay soil rich in entire fossils and just 60km from the sea.
Microclima is also very special, sea wind breeze always in late afternoon give some freshness to the soil, so to the wine, with some notes of salt and exaltation of flavours. Each year, the vinification adapts in respect to the vintage.
However, some things are constants: spontaneous fermentation using indigenous yeasts, no fining, no filtering, no additives other than, occasionally, a tiny amount of sulphur at bottling. Each year, as the impact of weather change the ratio of the grapes, so does the label – a synaesthetic representation of the vintage as a colour.
