School teacher, Cristobal Vanyo is from Ontinyent, a town located between Valencia and Alicante in Spain. It is in Catalonia, at Terra Alta, that Cristobal matured his first wine in 2015 with Laureano Serres Montagut, another natural wine artist with whom he continues to collaborate. Red, white, rosé, Pet Nat, Ancestral wines, all possible vinifications are approached with fermentation in stainless steel vats, amphorae and barrels. Minifundist, the particularity of the Cos a Cos vineyard (body to body in Valencian) is to harvest vines that have been abandoned for years, with the agreement of the owner when it is identifiable, a guarantee of untreated soils but hardly candidates for certification. In the cellar as in the vineyard, no chemical input is used, the yeasts are indigenous, the wines are not filtered and do not undergo any other operation mechanical than racking.
