The estate is located in Rasiguères in the Fenouillède massif in the middle Agly valley with 12 ha of vines in production. Our vines are located in the commune of Rasiguères and Lansac between 120 and 380 meters, 2/3 of which are on hillsides on geological formations of very old age (Paleozoic era) with two very distinct parts. One is located on the Lansac-Lesquerde plateau on a granite formation, the other part closer to Rasiguères on very complex gray-black shale formations. We observe trends and particularities in our wines linked to the fact that the vines are on these different formations. Observing the behavior of the vines and natural management are the essential components of our cultivation method. The plant cover has its role to play so as not to leave the soil bare in winter. We scratch the plots lightly at the end of spring, which provides them with plant biomass that will be decomposed and integrated by the soil. We use organic fertilization and the use of fermented plant extracts to promote the natural defenses of the vines and we intervene in a limited way in terms of sulfur and copper treatment. Tractor and manual labor for vineyard work and manual harvesting. Short pruning makes it possible to adapt the production capacity to the soil reserves on lean and arid soils. The fermentations are carried out with indigenous yeasts, the macerations can last from 2 to 15 days depending on the cuvées that we wish to obtain. The aging is mainly done in vats or in 1/2 muids that have contained several wines. Some of our cuvées can be bottled after 24 months of ageing, by gravity and without filtration. The aging time allows a natural clarification of the wines. Another practice for a more complex white cuvée, dry and oxidative, consists in leaving the juice on fine lees in contact with air for a few months to develop the oxidation of the white and develop complex aromas. Bottling takes place twelve months after the harvest.
