From a very young age I was already pressing Pierre Overnoy's Ploussard 1991. This is how my life as a winemaker began. It was my grandmother, Anna Houillon, who took me on vacation to the vineyard, in Pupillin. I learned a lot there, evolving over the years just like the vines of my native Jura. My tasting apprenticeship began during the 1993 harvest with Pierre's nectars, surrounded by my uncles and aunt (Manu, Aurélien and Adeline).
All this accumulated energy and knowledge had motivated me to choose a winegrower's course rather than that of an engineer to which they would have wanted me. That's when the journey began, passing through the schools of Beaune then Montpellier where I obtained my BTS Viticulture and Oenology. Surprised by what I had been able to learn about wine, I chose to do my own experience by multiplying and comparing several workplaces. Thus I was able to work in large biodynamic estates in France (Stéphane Tissot, Dominique Derain) or in New Zealand (Urlar), but also in “wineries” of the wine industry abroad (William Selyem California , McGuigan Australia).
Then the opportunity to make my own choices presented itself and I joined Domaine de la Ville, in Morges in Switzerland. I was head of cultivation there from 2015 to the end of 2018, and notably converted the estate to biodynamics then created the natural vintages P982, 902, 900, 976 and Methode ancestrale. Discovering the consequences of my own choices led me toward independence. After bottling my Helvète 2018 vintage, I settled in Chautagne, a small Jura valley in the north of Savoie, framed by the Grand Colombier to the West and the Gros Foug to the East.
