Les Vignes de Paulette is the story of two friends, Clara and Simon, who joined forces to cultivate just over 3.50ha of vines in organic farming. Paulette is Clara's grandmother, she started it all! The adventure materialized when Pierre Boyat took over the vines in 2022, who is Simon's former internship supervisor in viticulture-oenology BTS. 2.6 ha of Gamay and 0.6 ha of Chardonnay are located in Leynes on granite soil, and 0.5 ha of Chardonnay in the "Viré-Clessé" appellation in Clessé on clay-limestone soil. Vines certified in organic farming. The vines are grown in low density, allowing for cover crops (rye, clover and mustard) which are destroyed or laid down to make a mulsh. Grass cover is managed by mowing and tillage. The treatments are limited to the use of copper and sulphur, and the application of herbal teas that we prepare based on comfrey, horsetail, osier and yarrow. We also apply biodynamic preparations. The harvest is done manually and in crates. All the grapes are stored in the cold for 24 hours then vatted in whole bunches and inerted with CO2. The duration of maceration varies according to the tasting of the juices. We want to make wines as naturally as possible, and we limit ourselves to the use of SO2, if it is really necessary! 2022 is our first vintage!
