The Binner have been winemakers since 1770 in the “Colmar pocket” in Ammerschwhir. The 11 hectares are exploited in family. The production of 50,000 bottles per year in biodynamics justifies a large staff: the Binner have always made the choice of quality over quantity. Environmentally friendly viticulture (no pesticides, no weed killers), careful vines with phytosanitary products of natural origin, severe sorting of the grapes after manual harvesting reduce yields (45 hl / ha compared to 88 hl authorized on the appellation). The wine making is just as serious (no inputs, no sulfur, except in special cases) and little filtration, maturing in hundred years in barrels for at least 11 months.
