The Domaine Les Pensées "sauvages" has existed since 2021, it is made up of several plots located in the new town of Orée d'Anjou (49, La Varenne and Champtoceaux) between Nantes and Angers on the south bank of the Loire. On a hectare and a half of vines, grow mainly grapes of melon de Bourgogne and gamay, with a little bit of pinot gris. The vines are in organic conversion - C2 - and worked without synthetic chemicals. "Controlled" grassing is preferred, green manure, and from time to time the help of Sabine and her horses for major work. Tractor use is reserved for a few copper and sulfur treatments around flowering. Otherwise, whey sprays, and occasional essential oils or herbs. Manual harvesting, goblet and guyot pruning. To date without cellar, I am welcomed at the Domaine de la Paonnerie for my vinifications carried out without inputs or added sulphites, and in the spirit of natural method wine. Different containers are tested, a jar lying in terracotta, polyethylene eggs, reconditioned barrels, stainless steel tanks. The wines: "Pantoun" (Pinot gris, small maceration in the terracotta jar); "Pioggia" (Gamay rosé, fermentation in barrels); "En verve" (Burgundy melon fermented and aged in polyethylene eggs); "Cratère" (Red Gamay fermentation and aging in different containers including barrels).
