We settled in Faucon (Vaucluse) in 2017 on a 9 hectare estate (vines, woods and moors), at the foot of Mont Ventoux. All in one piece, the land is clayey and sandy, which is due to a geological feature, the safre formations, which gives its name to the place called "La Roche Coucourde". The Domaine is run in organic farming. The soils are worked mechanically, without the use of pesticides, and are enriched by the fertilizer provided by our companions, Victoire and Castor. THE CAVE Aurélien Houillon is from Franche-Comté. From an early age he was initiated into the secrets of the vine and natural wines with Pierre Overnoy in Pupillin in the Jura. In 2007, he moved as a partner of Maison Pierre Overnoy. In 2014, he moved to Switzerland and converted an estate to biodynamics and extended his experience in natural wines to new grape varieties. In the cellar, Aurélien applies the Jules Chauvet winemaking method. It does not use any oenological input (yeast, glue, sulfur, etc.) and respects its raw material (no filtration, work by gravity), in order to leave the wines all their aromatic expression and their aging potential. In 2017, he took up a new challenge in Provence. The wines produced at the Domaine are natural wines in the strictest sense of the term. Nous nous sommes installés à Faucon (Vaucluse) en 2017 sur un domaine de 9 hectares (vignes, bois et landes), au pied du Mont Ventoux.
D’un seul tenant, les terres sont de type argileux et sableux, ce qui est dû à une particularité géologique, des formations de safre, qui donne son nom au lieu-dit « La Roche Coucourde ».
Le Domaine est conduit en agriculture biologique. Les sols sont travaillés mécaniquement, sans recours aux pesticides, et sont enrichis par l’engrais fourni par nos compagnons, Victoire et Castor.

LA CAVE
Aurélien Houillon est originaire de Franche-Comté. Dès son plus jeune âge il s’initie aux secrets de la vigne et des vins naturels auprès de Pierre Overnoy à Pupillin dans le Jura. En 2007, il s’installe en tant qu’associé de la Maison Pierre Overnoy.

En 2014, il part en Suisse et convertit un domaine à la biodynamie et étend son expérience en vins naturels à de nouveaux cépages. 
En cave, Aurélien applique la méthode de vinification de Jules Chauvet. Il ne recourt à aucun intrant œnologique (levure, colle, soufre, …) et respecte sa matière première (pas de filtration, travail par gravité), afin de laisser aux vins toute leur expression aromatique et leur potentiel de garde.
En 2017, il relève un nouveau défi en Provence.

Les vins produits au Domaine sont des vins naturels au sens le plus strict du terme.

Pour notre premier millésime (2017) nous proposons trois cuvées, assemblages de grenache, syrah et cinsault.
En 2018, nous avons opté pour des monocépages…
