We settled in Roussillon in 2018 and produced our first vintage on 1.7 ha of vines. Today the Domaine has 5 ha located on the terroirs of Tautavel and Vingrau. Our vines have been in organic conversion since our arrival. We mainly work with local grape varieties: Carignan, Grenache, Macabeu, Muscat and Mourvèdre. In the vineyard as in the cellar, everything is done manually; the grape harvests are manual and in crates, and the vinification is made with indigenous yeasts and in whole bunches. We bottle our wines at the estate by gravity and without filtration, and we try to limit the pumping on our wines as much as possible, thus advocating low-intervention vinification. We also favor the aging time of our wines. This is why we have placed the emphasis on long aging, from 18 to 24 months depending on the vintage.
