Daughter of restaurateurs, Catherine should have continued on this path. But that was without counting on his pugnacious temperament. After a BTS in viti-oeno, a diploma in oenology and some professional experiences (including one with Jean-Louis Trapet), Catherine Riss is hired by Michel Chapoutier to take care of a domain acquired in Alsace in Reichsfeld. Then very quickly her adventure began in 2012 on 1.3 ha thanks to the precious help of Antoine Kreydenweiss and Lucas Rieffel (with whom she worked until 2014). In 2015 it moved to its own premises. His work in the vineyards was oriented towards organic farming from the start and obtained his certification in 2015. A biodynamic approach is increasingly practiced there. The winemaking takes place without inputs or filtration.
