Rémy Kaneko has been the other half behind the hugely popular Chambre Noire wine bar in Paris for years. In 2021 he took over, with his wife Caroline, the family vineyards and olive groves, located on 2 ha in Saint-Maurice sur Eygues near the town of Nyons.
Caroline and Rémy opt for winemaking that completely renounces oenological auxiliaries including sulfur.
The old vines (85 years old) are located on the slopes of Saint Maurice on a terroir characterized by clay-limestone soils covered with rolled pebbles typical of the region. The youngest vines (25 years old) are located just above on a terrace of the same type.
They plan to plant other grape varieties, Maccabeu, Syrah, Bourboulenc and Xarel-Lo
