Vin issu du cépage Ansonica. Ce cépage est une cépage très sensible aux maladies et à la maturation très tardive et l'acidité faible. Pour palier à ce problème , le vigneron procède à 3 vendanges différentes (un anticipée pour l'acidité puis il procède à un taille dans la tige de la grappe afin de provoquer une concentration des sucres et de l'acidité. S'en suit alors une vendage classique et une tardive) et 3 vignifications le tout dans 3 contenants différents (contenant en ciment, inox et bois). En résulte un vin très beau, très complexe. La vigne est plantée sur un sol sablonneux présentant des billes de lave provenant d'anciennes sources d'eaux thermales.
Très sec et tanique à la fois, aromes de coings et d'abricots, bel exemple des grands écarts que peut faire un vin orange
