We work in regenerative organic agriculture, minimal processing, mainly for sowing green manure, which is followed by crimping, in alternate rows with organic fertilization, compost or manure. Sulfur and copper treatments, only if really necessary, are performed with the tractor. For the rest we prefer to work with a shredder. The rotary tiller has been banned from our land, the constant objective is to enrich the soil without using chemicals or salts, but only good practices and organic compounds prepared by us. In the cellar only strictly spontaneous fermentations, without piéd de cuve, without adding anything before and after and, unless it is absolutely necessary, without adding SO2 at bottling.
