Ours is a small company, 3.5 hectares of vineyards, almost all Frappato, and a little Nero D'Avola from which we obtain a rosé. We work in regenerative organic agriculture, minimal processing, mainly for green manure sowing, which is followed by crimping, in alternate rows with organic fertilization, compost or manure. Sulfur and copper treatments, only if truly necessary, are carried out with the tractor. For the rest we prefer to work with the mulcher. The tiller has been banned from our lands, the constant objective is to enrich the soil without using chemicals or salts, but only good practices and organic compounds prepared by us. In the cellar only strictly spontaneous fermentations, without piéd de cuve, without adding anything before or after and, unless it is absolutely necessary, without adding SO2 at bottling.
