That, in 2016, of our two families of winegrowers guided by the same ambition: to transcribe as faithfully as possible in our vintages the complexity of our different terroirs. Respect for life and nature. And for this, they practice Poussard pruning, natural grassing on one row and superficial plowing combined with hoeing on the other row in order to aerate the soil and promote the life of auxiliaries. Their vineyard has been managed organically since 2010. They have applied the principles of biodynamics since 2013 (certification in 2018) in order to strengthen the natural defenses of the vine. It is a continuous observation of the vines and the nature that surrounds it, an osmosis and a harmony that Catherine passionately freezes on photo paper. She also exhibits her most beautiful photos there in the cellar! Their first vinification in this new cellar dates back to 2017 With an entirely manual harvest at optimal maturity. The grapes are gently pressed for long hours to perfect the aromatic qualities. The must is then placed in magnificent century-old wooden tuns, stainless steel vats and barrels. Fermentation takes place spontaneously, with indigenous yeasts and is pushed as far as possible. The aging then continues for 8 to 12 months on total lees. Little or no sulfite is used. In order to produce dry, expressive wines with character, the Hirsinger-Marchal family also offers wines made from maceration and infusion. Similarly, they produce Pet Nat Muscat and Pinot Gris/Pinot Noir, which are highly anticipated every year. In short, the Domaine de l'Envol is a young estate, with dynamic and welcoming partners, authentic wines that resemble them... sincere, natural, elegant, accessible to all with very little or no inputs for an optimal expression of their terroir.
