I have been taking care of 2.4ha of vines since March 2022 and the pruning season. The company allowing me to produce wine was created in July 2022. It is 1.4ha of Syrah from 1999 and 1ha of Négrette from 1978. The vines are located north of Toulouse in Fronton. Both plots are bordered by acacia and oak woods. The Syrah is slightly sloping facing South-East and the Négrette facing South. The vines are not under the organic label but I drive them as they are. To fight against diseases, I use organic control methods, which go beyond the BIO label specifications such as the diffusion of fungus on the ground at the end of winter allowing to occupy the environment before the development diseases (BlackRot, mildew, etc.). I also use sprays of nettle and dried seaweed to bring some nutrients to the vines. The rows are 100% grassed, I simply perform mechanical work underfoot using a tractor to limit their development and water competition. The vines have therefore been conducted in "BIO+" for 2 years, but I have also changed the pruning mode to respect the flow of sap. Pruned using Guyot Poussard, known as "taille douce", the vines have since revealed much more intense foliage and development. The harvest is done after tasting the berries. I vinify in the neighboring castle, Château Terre Fauve, themselves in organic conversation since 2021 and using natural methods. The château's cellar dates back several centuries and is semi-buried allowing natural temperature control. To allow the maximum expression of the grape, out of 4 cuvées, 3 are sulphite-free and a third with a very low rate. The fermentations are made with indigenous yeasts, without fining or filtration. Clarification is done through settling and severe underdrawing using gravity and the cold that sets in in winter. Fermentation and aging take place in concrete vats with pumping over to aerate the must. I also use for the aging of barrels having had 4 or 5 wines to bring a little roundness to the wine, without the woody side.

Je m’occupe de 2.4ha de vignes depuis mars 2022 et la saison de taille. L’entreprise me permettant de produire du vin a été créée en juillet 2022. Il s’agit de 1.4ha de Syrah de 1999 et 1ha de Négrette de 1978. Les vignes sont situées au nord de Toulouse à Fronton. Les deux parcelles sont bordées par des bois d’acacia et de chêne. La syrah est en légère pente orientées Sud-Est et la Négrette orientée Sud.

Les vignes ne sont pas sous le label BIO mais je les conduis telle qu’elle. 
Pour lutter contre les maladies, j’emploie des méthodes de bio contrôle, qui vont au-delà du cahier des charges label BIO comme la diffusion de champignon sur le sol à la fin de l’hiver permettant d’occuper le milieu avant le développement des maladies (BlackRot, mildiou, etc). 
J’utilise aussi des pulvérisations d’ortie et d’algues séchées afin d’apporter un peu de nutriment à la vigne.
Les rangs sont 100% enherbés, j’effectue simplement un travail mécanique sous les pieds à l’aide d’un tracteur pour limiter leur développement et la concurrence en eau. 
La vigne est donc conduite en « BIO+ » depuis 2 ans, mais j’ai aussi changé le mode taille pour respecter les flux de sève. Taillées en Guyot Poussard, dit « taille douce », la vigne révèle un feuillage et un développement beaucoup plus intense depuis.

Les vendanges se font après dégustations des baies. 
Je vinifie au sein du château voisin, le château Terre Fauve, eux-mêmes en conversation BIO depuis 2021 et utilisant des méthodes naturelles. 
Le chai du château date de plusieurs siècles et est semi-enterré permettant un contrôle naturel de la température. 
Pour permettre l’expression maximale du raisin, sur 4 cuvées 3 sont sans sulfite et une troisième avec taux très faible. 
Les fermentations sont faites en  levures indigènes, sans collage, ni filtration. La clarification se fait par des débourbages et des sous-tirages sévères à l’aide de la gravité et du froid qui s’installe l’hiver. 
La fermentation et l’élevage se font en cuve béton avec des actions de remontage pour aérer le mout. J’utilise également pour l’élevage des barriques ayant eu 4 ou 5 vins pour apporter un peu de rondeur au vin, sans le côté boisé.
