After 15 years of experience in different professional worlds, Jean Benoit and Bénédicte acquired an 18-hectare AOP Coteaux d'Aix en Provence wine estate in 2017. Organic certification was obtained in 2020. He restructured the estate by planting 11 varieties of white grape varieties!
The black grape variety vines have an average age of 35 years and for some more than 55 years. The vineyard is distinguished by extraordinary trellising, natural grass cover every other row and green manure sowing. Soil work is limited to the foot, to limit compaction. First vintage in 2020 at the estate following the development of a cellar.
The harvest is done manually in crates, the vinification is carried out in whole clusters by gravity, the reds undergo cold pre-fermentation for more than 7 days without crushing or punching down, the fermentation is carried out with native yeasts without any inputs. Sulfur is added only at the end of malolactic fermentation or at bottling. All wines, including whites and rosés, are aged in eggs or 500 L barrels for 6 months. 3 Red vintages were created, all having the common trait of Cinsault.
Their name evokes our history: Providence, Chemin Faisant, à l’Aventure. An atypical rosé vinified and aged in barrels. First white vintage in 2021 with a blend of Ugni, Vermentino, Clairette. The key word is the expression of the grape variety and honoring Cinsault and Carignan. A promising terroir for future white wines. Production of the estate: 15/20,000 bottles/year.
