Born in the former GDR, Axel Prüfer arrived in France with his wife in 1998. He discovered Languedoc and met great names in natural wine including Jean-François Nicq (where he made his first harvest experiences in 2002) and Eric Pfifferling. In 2003 he created his own estate, Le temps des cerises, in the Hérault region, in the Haute Vallée de l'Orb appellation. The option of "all nature" is for him as obvious, as well as a vinification in carbonic maceration, without pigeage nor reassembly and at low temperature. The estate currently has about 8.5 hectares: carignan, grenache, cinsault, merlot, aramon ...
