Winemaking objectives: indigenous yeasts, no or little SO2, no fining, no filtrations. In order to achieve these objectives, particular attention is paid to hygiene and materials.
Each vintage is vinified in plots and as a single varietal, with varied aging in stainless steel vats, barrels and jars.
