DOMAINE DU MINOT, I created my domain in 2022, on the family winery of 15HA plus 10HA rented. Located in Valréas in the enclave of the popes; The work in the vineyard is 100% organic, with even the use of essential oils for the treatments. The vines are all grassed for the development of biodiversity. The grapes are harvested manually with a skip or with crates. Vinification in the cellar is as healthy as possible, no filtration, no fining, no yeasting, just the addition of sulphite if necessary. Several vinification techniques are used, direct press, maceration, barrel and even amphora. A future vitiforestry project is underway.
