A trained oenologist, Aurélien Febvre took over the family estate in 2002, representing the 7th generation of winegrowers. Based in Burgundy Auxois in Thorey-sous-Charny, he now cultivates 2 hectares of vines using organic farming. He is also the only certified organic winegrower of the IGP Coteaux de l'Auxois. Among these hectares, Aurélien inherited from his nurseryman grandparents, an old quality Chardonnay vine (more than a century old) which allowed him to make a mass selection in order to replant. Strong in his convictions, Aurélien fully embraces his winemaking choices without sulphites (unlike classic organic wine), without filtration and without fining or other additions, which allows him to offer wines labeled Vin Method Nature. The range of wine is available in two families: Two vintages named "En Aparté", white and orange, aged in oak barrels and three "Terre de Thorey" vintages, available in red, rosé and white, aged in terracotta jars. Among them, we can cite Terre de Thorey Sauvage, a red wine made from 2 grape varieties: 50% Pinot Noir and 50% Gamaret (a grape variety from Switzerland). In addition to its composition, this wine presents multiple particularities; contrary to "usual" practices, the 2 grape varieties are harvested and vinified together, using the mille-feuille method, in terracotta jars with a capacity of 500 to 1000 liters. Harvested with whole grapes, this sulphite-free wine vats for 25 to 30 days compared to around 15 days usually. Fermentation is also special since it takes place first during maceration and secondly in the liquid phase after racking and pressing. In addition, malolactic and alcoholic fermentations occur simultaneously and not successively. The wine spends 11 months in the jar; These are made of terracotta which, while allowing micro oxygenation as allowed by aging in oak barrels, presents an interesting neutrality in aromatic terms. Made in Tuscany (Italy), these egg-shaped jars allow natural stirring which will enrich the wine thanks to the compounds contained in the lees and which, moreover, will be interesting for the conservation and aging of the wine. In addition, this container with its particular shape promotes, under the influence of the moon, the movement of the liquid and therefore the suspension of the lees.

Œnologue de formation, Aurélien Febvre a repris le domaine familiale en 2002, représentant  la 7e génération de viticulteur. Installé en Bourgogne Auxois à Thorey-sous-Charny, il cultive aujourd'hui 2 hectares de vignes en agriculture biologique. Il est d'ailleurs le seul viticulteur certifié bio de l' IGP Coteaux de l'Auxois.

Parmi ces hectares, Aurélien a hérité de ses grands parents pépiniéristes, une vieille vigne de Chardonnay de qualité (vieille de plus d'un siècle) qui lui a permis de réaliser une sélection massale afin de replanter.

Fort de ses convictions, Aurélien assume pleinement ses choix de vinification sans sulfites (contrairement au vin bio classique), sans filtration et sans collage ni autre ajout, ce qui lui permet de proposer des vins labellisés Vin Méthode Nature. 
La gamme de vin est déclinée en deux familles: Deux cuvées nommées "En Aparté" blanc et orange élevées en fûts de chêne et trois cuvées "Terre de Thorey" déclinées en rouge, rosé et blanc élevées en jarres en terre cuite.

Parmi eux, nous pouvons citer le Terre de Thorey Sauvage, un vin rouge composé de 2 cépages: 50% de pinot noir  et 50% de Gamaret (cépage originaire de Suisse). En plus de sa composition, ce vin présente de multiples particularités; contrairement aux pratiques «habituelles», les 2 cépages sont récoltés et vinifiés ensemble, selon la méthode du mille-feuilles, dans des jarres en terre cuite d'une capacité de 500 à 1000 litres. Récolté en vendanges entières, ce vin sans sulfite cuve pendant 25 à 30 jours contre environ 15 jours habituellement. La fermentation est elle aussi particulière puisqu'elle se fait dans un 1er temps pendant la macération et dans un 2nd temps en phase liquide après le décuvage et le pressurage. De plus, les fermentations malolactique et alcoolique ce font simultanément et non successivement. Le vin passe 11 mois en jarre; celles-ci sont fabriquées en terre cuite ce qui, tout en permettant la micro oxygénation comme le permet l'élevage en fut de chêne, présente quant à elle une neutralité intéressante en terme aromatique. Fabriquées en Toscane (Italie), ces jarres en forme d’œuf permettent un bâtonnage naturel qui enrichira le vin grâce aux composés contenus dans les lies et qui, par ailleurs, sera intéressant pour la conservation et le vieillissement du vin. De plus, ce contenant à la forme particulière, favorise, sous l'influence de la lune, le mouvement du liquide et donc la suspension des lies.
