A trained oenologist, Aurélien Febvre took over the family estate in 2002, representing the 7th generation of winegrowers. Based in Burgundy Auxois in Thorey-sous-Charny, he now cultivates 2 hectares of vines using organic farming. He is also the only certified organic winegrower of the IGP Coteaux de l'Auxois.
Among these hectares, Aurélien inherited from his nurseryman grandparents, an old quality Chardonnay vine (more than a century old) which allowed him to make a mass selection in order to replant.
Strong in his convictions, Aurélien fully embraces his winemaking choices without sulphites (unlike classic organic wine), without filtration and without fining or other additions, which allows him to offer wines labeled Vin Method Nature.
The range of wine is available in two families: Two vintages named "En Aparté", white and orange, aged in oak barrels and three "Terre de Thorey" vintages, available in red, rosé and white, aged in terracotta jars.
Among them, we can cite Terre de Thorey Sauvage, a red wine made from 2 grape varieties: 50% Pinot Noir and 50% Gamaret (a grape variety from Switzerland). In addition to its composition, this wine presents multiple particularities; contrary to "usual" practices, the 2 grape varieties are harvested and vinified together, using the mille-feuille method, in terracotta jars with a capacity of 500 to 1000 liters. Harvested with whole grapes, this sulphite-free wine vats for 25 to 30 days compared to around 15 days usually. Fermentation is also special since it takes place first during maceration and secondly in the liquid phase after racking and pressing. In addition, malolactic and alcoholic fermentations occur simultaneously and not successively. The wine spends 11 months in the jar; These are made of terracotta which, while allowing micro oxygenation as allowed by aging in oak barrels, presents an interesting neutrality in aromatic terms. Made in Tuscany (Italy), these egg-shaped jars allow natural stirring which will enrich the wine thanks to the compounds contained in the lees and which, moreover, will be interesting for the conservation and aging of the wine. In addition, this container with its particular shape promotes, under the influence of the moon, the movement of the liquid and therefore the suspension of the lees.
