Aurèle Morf, epicurean winemaker from La Prévôté, is the instigator of the Cave Saint-Germain. It is through his adventurous spirit and his atypical career that he has succeeded, since 2005, in producing wine in Moutier. Its grapes come from vines cultivated in different parts of Switzerland, notably in Ticino. Since 2008, he has been working to develop the somewhat crazy project, namely to cultivate vines and produce his wine on the former lands of the Abbey of Moutier-Grandval, in the Jura. Philosophy of "natural" wines The production of natural wines is a philosophical choice aimed at creating a product free of any substance resulting from synthetic chemistry, and this, in all of its manufacturing phases. The wine thus preserves its lively character. It is in this spirit that the range of "natural" wines from Cave Saint-Germain has been developed with the constant concern to preserve the notion of terroir and the specificity of each vintage.
