Les Clos * des Pères ** is located in La Livinière, in the Minervois on the foothills of the Montagne Noire. We took over 7 plots of vines on soils of different compositions predominantly clay-limestone. The estate is made up of several grape varieties: Vieux Grenache noir, Grenache gris, Cinsault, Syrah and Carignan. Respect for the soil and the vines pushes us to work most often with our arms to avoid compaction of the soil, and this up to manual harvesting, entirely carried out in crates, to keep the grapes intact until they are placed in vats. The vinification is carried out in vats for a gentle and slow extraction of the aromas. The aging is then carefully adapted to the vintage and the grape variety in order to accompany the wine in a slow maturation either in vats or in barrels of several wines from 228 to 500 liters. - * surrounded by dry stone walls, - ** they belonged to Julien's father, grandfather and great grandfather They have never been worked in "conventional"

Les Clos* des Pères** est situé à La Livinière, dans le Minervois sur les contreforts de la montagne Noire. Nous avons repris 7 parcelles de vignes sur des sols de différentes compositions à dominantes argilo-calcaire. Le domaine se compose de plusieurs cépages : Vieux Grenache noir, Grenache gris, Cinsault,  Syrah et Carignan.

Le respect de la terre et de la vigne nous pousse à travailler le plus souvent avec nos bras pour éviter le tassement des terres et cela jusqu'aux vendanges manuelles entièrement réalisées en cagettes pour garder le raisin intact jusqu'à l'encuvage.

La vinification est réalisée en cuve pour une extraction douce et lente des arômes. L'élevage est ensuite soigneusement adapté au millésime et au cépage afin d'accompagner le vin dans une lente maturation soit en cuve ou bien en barriques de plusieurs vins de 228 à 500 litres.
