The Holding has been in the hands of the same family for almost a century and has now come to the fourth generation. Fongoli is structured in one body, for a total of 30 hectares, with a winery at the center of the property, on one of the highest hills of Montefalco, more precisely in San Marco. For years all of the grounds have adopted biological methods, denying all chemical additions to ensure a minor ecological impact. The soil composition is a medium thickness and mostly composed of clay, the vines have a southeast and southwest exposure. The age of these vines varies: some Sagrantino vines are over 40 years old and their grapes have been selected to have their own labels. In the winery the fermentation process is induced by local yeasts and for those wines that require such practice, the maturing process occurs in great Slavonian barrels.
