The domain Domain in perpetual evolution, scattered over several municipalities in the South Luberon (84) with leased vines in Puyvert, Lourmarin and Cucuron, a vineyard owned in Vaugines, as well as a vinification cellar rented in the municipality of Ansouis. The vines All the vines are grown in certified organic farming. They are naturally grassed or sown from October to May and then lightly worked during the dry season. 3.5 ha in Puyvert: Grenache and Syrah for the old red vines, Ugni Blanc and Clairette for the old white vines, as well as 1 ha of 20-year-old Syrah. In Lourmarin, there is 1 ha of white Grenache. In Cucuron, one vine is planted with chardonnay (1 ha) and another, located higher up the hill, is planted with syrah (0.5 ha). In Vaugines, there is 1 ha of Syrah (10 years old and 45 years old) To this are added the plantations which are not yet in production: 0.5 ha of cinsault, 0.5 ha of bourboulencs and 0.25 ha of macabeu. Winemaking The harvest is manual, the grapes are transported in boxes to the cellar to maintain their integrity. The vinification is natural (indigenous yeasts, no fining, no filtration, no enzyming, no nitrogen supply, no sulphites during fermentation (except serious accident), a minimal dose of sulphite can be added between the end of fermentation and bottling if the wine requires it: max 20mg/l). Most of the reds are vinified in whole, untrodden bunches, except for the Grabuge cuvée, which is destemmed. The whites are pressed directly with cooled grapes to limit oxidation. Fermentation and aging mainly take place in stainless steel and fiber vats. Two demi-muids of 7 and 8 wines can be used for the fermentation and aging of white wines.
