Agricola Arzilla was born in 2020 from two eccentric old men and a nice team of deranged young people with a passion for natural wine. It takes its name from the Arzilla stream that laps our vineyards, without denying the fact that between a tasting and a decanting we are always a little lively. We manage approximately 3 hectares of forest, 300 olive trees and 7 hectares of organic vineyard with Sangiovese, Biancame, Fiano and Montepulciano grapes. The lands cultivated with vines on hills directly overlooking the sea are touched by salty air which affects the quality of the grapes and therefore the wine we bottle, giving it a unique freshness. We do not enter the vineyard with the tractor unless strictly necessary and we work manually as much as possible to avoid compacting the soil. Let's cut the grass no more twice a year, thus leaving the soil naturally grassed, so as to encourage the proliferation of wild herbs and insects. This practice also allows us not to irrigate and stimulates the roots to go deeper. We do not plow, so that the soil is not eroded and maintains humus. We don't cut the branches so as not to injure them plant and we do not fertilize: the only organic substance that nourishes our soil comes exclusively from cutting wild herbs and shredding prunings. We do not stress the vineyard with excessive production so that the grapes grow healthy and rich, which allows us not to use or limit to a minimum the use of sulfur dioxide and obtain grapes rich in spontaneous and natural yeasts. We do not add industrial yeasts to the must which therefore comes from healthy grapes and ferments spontaneously. We do not use chemical additives, but let the wine freely follow its path. We don't do clarifications, just transfers. Any funds are an indication of the naturalness of the wine. The harvest is obviously manual. In summary: Ours are natural wines obtained from an independent producer who works on proprietary, low-yield vineyards, from hand-harvested grapes and from an agronomy that is as natural and certified organic as possible. We completely exclude the use of synthetic pesticides, herbicides or insecticides. Our products contain only grapes without the addition of yeasts or enzymes or other fermentation aids, sugars or concentrated musts, without acidity adjustments, micro-oxygenation or reverse osmosis, clarifications or micro-filtration; sulphites are almost never added except rarely and in exceptional cases without exceeding 30 mg per liter. We pay meticulous attention to all phases of the process: in the operations in the vineyard, in transport of the grapes to the cellar, in the control of fermentation temperatures and throughout maturation and storage.
