The Castagné brothers produce grapes on 3.5ha on the heights of Martel, in the lot. The plots are planted on a south-west facing hillside. The vines are organic and are located at altitude in the woods, isolated. The causse being a sunny and dry region, there is very little phyto pressure, we only use organic phyto products on rare occasions. 6 grape varieties were planted: Malbec (Cahors wine variety), Pinot Noir and Syrah for red grapes; Chenin, Chardonnay and Roussanne for the white grape varieties. We work the vineyard mechanically, with a tractor without weeding. With a view to always getting closer to the natural cycle of our environment, we have set up a system of green manure that is self-sown. The harvest is done by hand, in crates. Once the grapes have gone to the cellar, settling of the whites with chickpea powder. Then the indigenous yeasts begin their work when we give them the ideal temperatures. We touch the wine as little as possible, there is only one racking. Depending on the turbidity of the wine, we carry out a light filtration on cellulose.

Les frères Castagné produisent du raisin sur 3,5ha sur les hauteurs de Martel, dans le lot. Les parcelles sont plantées sur un coteau exposé sud ouest. Les vignes sont conduites en bio et sont situées en altitude dans les bois, isolées. Le causse étant une région ensoleillé et sèche, il n’y a que très peu de pression phyto, nous n’utilisons qu’à de rare occasion des produits phyto bio.

6 cépages ont été plantés : Malbec (cépage du vin de Cahors), Pinot noir et Syrah en ce qui concerne les raisins rouges ; Chenin, Chardonnay et Roussanne pour les cépages blancs.

Nous travaillons le vignoble mécaniquement, au tracteur sans désherbage. Dans l’optique de toujours plus se rapprocher du cycle naturel de notre environnement, nous avons mis en place un système d’engrais vert qui se ressème. Les vendanges se font à la main, en cagettes.

Une fois le raisin parti au chai, débourbage des blancs avec une poudre de pois chiche. Ensuite les levures indigènes commencent leur travail lorsque nous leur donnons les températures idéales. Nous touchons le moins possible le vin, il n’y a qu’un seul soutirage. Suivant la turbidité du vin, nous procédons à une filtration légère sur cellulose.
