Cécile e Jean si sono stabiliti a Moissat nel 2010, 20 km a est di Clermont-Ferrand. Hanno gradualmente ampliato il loro vigneto rilevando vecchie viti di Gamay d'Auvergne, Gamay e Plantet noir; hanno poi completato le varietà di uva con impianti di Chardonnay, Pinot nero e Syrah, raggiungendo i 5 ettari.

Le viti sono coltivate secondo un approccio agroecologico che rispetta il terroir: potature delicate, estratti fermentati e decotti vegetali...

La vinificazione avviene senza additivi, utilizzando lieviti indigeni, senza filtrazione né chiarifica.
