Pinot Grigio
A 5-7 days of maceration, spontaneous fermentation and malo, no temperature control, 12 months of batonnage. Maturation on lees for 28 months, 60% goes in 225L, 300L and 500L used French and Serbian oak barrels, and 40% goes into 500L acacia barrels. Then all of it goes in 2,000L stainless steel tanks. Unfined/Unfiltered. No added SO2

Baking spices, plum, smoke, and leather on the nose. Funky plum / apricot on the palate with a bit of burnt caramel or honey. Medium bodied with high acidity. Some salinity and minerals hiding in there as well. Very delicious and moreish
