Spontaneous fermentation lasts between 15 days and 1 month, staying in contact with the lees sans battonage and aged for 18 months in barrique. Unfiltered. Calm and complex nose, chalk, sunflower ceed’s, melon, peach, honey, apple Dry and light palate, high acidity, saulty finish
