Dernier Né es una mezcla de gamays jóvenes con un poco de Pinot Noir vinificado por un lado y Pineau d'aunis por otro. Los jugos ensamblados al final de la fermentación se envejecen en medio muidos y se vinifican sin azufre. La nariz exuda frutas rojas con bonitas notas de pimienta. El vino es jugoso, fluido, con mucha energía y digestibilidad.
