Domaine Julien Guillon

Julien will tell you that he was literally born in the period of his vocation (his birthday is in September, under the sign of Bacchus, the god of wine in Roman mythology). His journey to cultivating his own vineyard began when he was only five years old, helping his brother harvest grapes in Gevrey. He then studied viticulture in Beaune, France, then returned to Geneva where he worked at Cave 20G, a wine cellar in Carouge, Switzerland. It was there that he discovered the pleasure of natural wines. Julien then left Geneva to open a natural wine bar in Valais, but naturally found himself working in the vineyards. In 2017, Julien started with 1HA in Ayent and in 2018 he had a total of 3.5H, including a 2.3H plot at 900 meters above sea level where he produced his first vintage. It then expanded to 4.5 hectares, with an additional 1.2 hectares of land close to the forest and a natural water source. One of the well-known characteristics of natural wine is its ability to preserve "the soul of the grape". You don't have to visit the terraces of Buitonnaz to know that in each vintage he produces, Julien merges his soul with that of the grape he cultivates.
