Caviste
This unique white wine blend features six grape varieties: Alicante Blanco, Arinto, Fernão Pires, Sara Nova, Seminário, and Vital. The grapes are grown in limestone and sandy soils, which contribute to the wine's character. The winemaking process is meticulous and natural. The grapes are carefully hand-selected in the vineyard and transported in small 12kg boxes to preserve their quality. At the winery, the grapes are pressed, and the juice is left in contact with the pressed grapes for two days to extract more flavor and complexity. Fermentation and aging take place in 400-liter barrels for an extended period of 35 months. This long aging process allows the wine to develop depth and complexity. The wine is then bottled using gravity, a gentle method that minimizes disturbance to the liquid. Martinho's Wave is produced with minimal intervention. It is unfiltered and unfined, preserving its natural characteristics and potentially resulting in a more textured and complex wine. Additionally, no sulphites are added during the winemaking process, appealing to those who prefer wines with no added preservatives.
